In this archipelago, the true spirit of the Azorean people is deeply rooted in their connection to the land and the sea, often expressed in a rich tapestry of products distinguished by their cultural heritage and originality.

One of the most valued traditions across the various Azores islands is cheese production. The islands of São Jorge and Terceira are particularly known for this. But on the island of São Miguel, there’s a cheese factory producing a unique and differentiated product that has left many amazed by its innovation, locally and internationally.

It all began a few years ago. After some setbacks in the family business, which had always been linked to agriculture and the dairy industry, a 21-year-old woman decided to reinvent the business and invest in a new product: cheese. Yet, she didn’t want to create just another cheese, she aimed to craft a typical cheese that highlighted the region’s distinctive characteristics. The main ingredient is milk, sourced from the family’s cows that graze on the green fields, and everything is made by hand in their factory. So, what makes it different? After the cheese is ready, it’s immersed in a sour mineral water – said to have healing properties – from the Vale das Furnas. To reach the final version of the cheese, the young entrepreneur tested five of the 57 mineral waters that exist in the Furnas region. Yes, you read that right, 57 mineral waters! This water gives an authentic flavor to the cheese, making it completely different from anything seen before. The factory also produces some varieties of this artisanal cheese that include oregano and spices.
