Start by giving the experience an initial kick! You’ll learn how to mix honey, sugarcane brandy and lemon juice to make “poncha”, the island’s most popular drink after Madeira wine. Also well-known is the “espetada”: grilled beef seasoned with salt, garlic and bay leaves. The secret is in the simple seasoning and the heat of the charcoal. How about “milho frito”, cornmeal diced and fried, or the famous fillet of black swordfish? Or the fantastic tuna steak?

Exotic fruits, including the enormous variety of passion fruits, bananas, and pitanga (Brazilian cherry), are tastes that identify the island. Sweets include the fantastic honey cake!
